Ingredienti per una porzione:
200 ml di latte di soia naturale
1 cucchiaio di aceto di mele
Procedimento:
Far bollire il latte, appena raggiunge il massimo bollore (quando la schiuma del latte tende a salire) versare il cucchiaio d’aceto, spegnere la fiamma e rigirare. Dovrebbe subito coagulare, i fiocchi coagulati vengono su e rimane il siero giallino trasparente. Se invece vedete la formazione di fiocchi ma il siero è ancora latte, portate nuovamente a bollore e aggiungete ancora qualche goccia di aceto di mele. Raccogliete tutta la parte coagulata e mettetela in un colino, datele una sciacquata rapida sotto l’acqua per togliere il sapore dell’aceto. Mettete a scolare, potete anche un pò premerla contro la maglia fitta del colino per far perdere l’acqua in eccesso. Togliere dal colino e metterla su un piattino. Ecco, la ricotta è pronta!
Con queste dosi si ottengono circa 60 gr. di ricotta
